Delicious and crispy zucchini fritters, perfect for a light lunch or appetizer, enhanced with Parmesan and garlic.

Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped green onions
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis into fine shreds and squeeze out excess moisture.
  2. Combine the grated zucchini, flour, Parmesan cheese, chopped green onions, eggs, garlic powder, salt, and pepper in a large bowl.
  3. Heat oil in a frying pan over medium heat.
  4. Fry spoonfuls of the zucchini mixture in the pan, flattening each fritter slightly.
  5. Cook for 3-4 minutes on each side until golden brown.
  6. Drain on paper towels and serve warm.

Notes

Serve with a dollop of sour cream, feta cheese, or hot sauce for an extra kick.
