A succulent salmon fillet cooked in a rich buttery sauce with garlic, cherry tomatoes, and spinach, evoking the flavors of Tuscany.

Ingredients

  • 4 salmon fillets
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.
  4. Add the spinach leaves and Italian seasoning; cook until the spinach is wilted.
  5. Season the salmon fillets with salt and pepper, then place them in the skillet.
  6. Cook the salmon for 4-5 minutes on each side, or until cooked through.
  7. Squeeze lemon juice over the salmon and garnish with chopped parsley before serving.
