  • 4 salmon fillets
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt the butter in a large skillet over medium heat until golden and fragrant.
  2. Add in the minced garlic and sauté until fragrant.
  3. Stir in the halved cherry tomatoes, cooking until softened.
  4. Throw in the spinach and stir until wilted.
  5. Pour in the heavy cream, mixing until creamy.
  6. Add the Parmesan cheese and Italian seasoning, stirring until combined.
  7. Season with salt and pepper to taste.
  8. Push the vegetables to the side and add the salmon fillets, cooking for 4-5 minutes on each side.
  9. Serve hot, garnished with fresh parsley.
