Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Cook the onion and garlic in a skillet until softened.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper until well combined.
  6. Stuff each pepper generously with the turkey mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove the foil, add cheese if desired, and bake for an additional 10 minutes.

Notes

Leftover stuffed peppers can be stored in an airtight container in the refrigerator for up to 4 days. They also freeze well for up to 3 months.
