Delicious soy sauce marinated chicken thighs glazed with a sweet teriyaki sauce, perfect for a satisfying weeknight dinner.

  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds and green onions for garnish

Instructions

  1. Combine the Marinade: In a bowl, combine soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil. Whisk until the brown sugar is dissolved and everything is blended harmoniously.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, allowing them to sit for at least 30 minutes. For deeper flavor, let them soak overnight in the fridge if time permits!
  3. Preheat Your Cooking Surface: Preheat your grill or skillet over medium heat, ensuring a beautiful sear on your chicken.
  4. Remove the Chicken from Marinade: Take the chicken thighs out of the marinade, but be sure to reserve that flavorful liquid! It will become your sauce shortly.
  5. Cook the Chicken: Place the chicken on the grill or skillet and cook for about 6-7 minutes on each side or until the meat is cooked through and beautifully caramelized.
  6. Boil the Reserved Marinade: While the chicken cooks, transfer the reserved marinade to a small saucepan and bring it to a boil. This step is essential to eliminate any raw chicken bacteria and deepen the flavors.
  7. Thicken the Sauce: Mix cornstarch with water in a separate bowl, then add this mixture to the boiling marinade to thicken it into a luscious sauce.
  8. Plate and Garnish: Serve the cooked chicken thighs drizzled with the thickened sauce, and garnish with sesame seeds and chopped green onions for that extra pop of flavor and color.
