A quick and satisfying dish featuring juicy chicken and crisp-tender vegetables in a rich teriyaki sauce.

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup teriyaki sauce
  • 2 tbsp vegetable oil
  • 1 clove garlic, minced
  • 1 tsp ginger, minced
  • Cooked rice, for serving
  • Sesame seeds, for garnish

Instructions

  1. Heat the skillet: Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the aromatics: Add garlic and ginger, sauté for 30 seconds until fragrant.
  3. Cook the chicken: Add sliced chicken and cook until no longer pink, about 5-7 minutes.
  4. Add the vegetables: Add mixed vegetables and stir-fry for another 3-5 minutes, until they’re crisp-tender.
  5. Pour in the teriyaki sauce: Pour in teriyaki sauce and stir to coat everything evenly, letting it bubble slightly.
  6. Serve & garnish: Serve over cooked rice and sprinkle with sesame seeds for an added crunch.

Notes

This stir fry is perfect on its own or paired with crispy spring rolls or cucumber salad. Feels free to swap chicken for shrimp or tofu.
