  • 4 bell peppers
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook ground beef over medium heat until browned. Drain any excess fat.
  4. Stir in taco seasoning, cooked rice, black beans, corn, and salsa; mix well until evenly coated.
  5. Spoon the mixture into each bell pepper and place them upright in a baking dish.
  6. Top each pepper with a generous handful of shredded cheese.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. Remove foil and bake an additional 10 minutes until the peppers are tender, and the cheese is bubbly.
  9. Let cool slightly before serving.

Notes

These peppers can be served with guacamole, fresh cilantro, or a light salad. Leftovers can be stored in the refrigerator for 3-4 days.
