Delightful strawberry cheesecake bars featuring a buttery graham cracker crust, creamy cheesecake filling, and a vibrant strawberry swirl.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry preserves

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined. Press the mixture into the bottom of the prepared baking dish to form a crust.
  3. Beat together the cream cheese, 1/2 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crust.
  5. Drop spoonfuls of strawberry preserves on top and swirl gently with a knife.
  6. Arrange the sliced strawberries over the mixture.
  7. Bake in the preheated oven for 25-30 minutes or until set.
  8. Allow to cool, then refrigerate for at least 2 hours before cutting into bars. Enjoy!
