Delightful egg bites inspired by Starbucks, featuring fluffy eggs, cheese, and veggies, perfect for breakfast or brunch.

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or Gruyere)
  • 1/2 cup spinach, chopped
  • 1/4 cup red bell pepper, diced
  • Salt and pepper to taste
  • 1/4 cup cooking water

Instructions

  1. Preheat your oven to 300°F (150°C) to prepare for the gentle baking of your egg bites.
  2. Whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  3. Stir in the shredded cheese, chopped spinach, and diced bell pepper, blending them into the egg mixture.
  4. Lightly grease a muffin tin or use silicone molds to ensure your egg bites release easily.
  5. Pour the egg mixture into the muffin cups, filling them about 2/3 full.
  6. Add a little water to the bottom of the muffin tin to create steam during cooking.
  7. Bake for about 25-30 minutes or until your egg bites are set and lightly golden on top.
  8. Let the egg bites cool slightly before gently removing them from the molds.

Notes

Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Reheat as needed.
