  • 45 lbs pork shoulder
  • 1 cup barbecue sauce
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup apple cider vinegar
  • Buns for serving

Instructions

  1. Place the sliced onions and minced garlic in the slow cooker.
  2. Season the pork shoulder generously with smoked paprika, salt, black pepper, and cayenne pepper.
  3. Layer the seasoned pork on top of the onions in the slow cooker.
  4. Mix the barbecue sauce and apple cider vinegar in a bowl, then pour over the pork.
  5. Cover and cook on low for 480-600 minutes or until the pork is tender.
  6. Remove the pork from the slow cooker and shred it with two forks.
  7. Return the shredded pork to the slow cooker and mix it with the juices.
  8. Serve on buns with additional barbecue sauce if desired.

Notes

For a spicier kick, increase the cayenne pepper or mix in jalapeño slices. Leftovers can be stored in the refrigerator for up to four days.
