A quick and vibrant shrimp stir fry featuring fresh vegetables and a delicious soy sauce glaze, perfect for weeknight dinners.

Ingredients

  • 1 pound large shrimp, deveined
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Cook the shrimp until they turn pink, about 2-3 minutes.
  4. Add mixed vegetables and soy sauce, stir-frying until the vegetables are tender but still crisp, about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve over cooked rice or noodles.
