A delightful Shrimp Fried Rice that’s simple to prepare and bursting with flavor, perfect for any weeknight meal.

Ingredients

  • 2 cups cooked rice
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce
  • 2 green onions, sliced
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds.
  3. Toss in the shrimp and cook until they turn a lovely pink color, about 2-3 minutes.
  4. Push the cooked shrimp to one side of the skillet.
  5. Pour the beaten eggs into the empty side of the skillet and scramble until fully cooked.
  6. Add the cooked rice and mixed vegetables to the skillet.
  7. Drizzle in the soy sauce and stir everything together.
  8. Allow the mixture to cook for an additional 3-4 minutes, stirring frequently.
  9. Add the sliced green onions, season with salt and pepper, and serve hot.

Notes

For best texture, use day-old rice and feel free to customize with your favorite veggies.
