A comforting and customizable Shrimp Fried Rice that’s quick to prepare and perfect for any weeknight.

Ingredients

  • 2 cups cooked rice
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove and set aside.
  3. In the same skillet, add the mixed vegetables and cook until tender.
  4. Push the vegetables to one side and pour the beaten eggs into the other side, scrambling them until cooked.
  5. Add the cooked rice, shrimp, soy sauce, salt, and pepper. Stir well to combine and heat through.
  6. Garnish with sliced green onions before serving.

Notes

Use day-old rice for best results, and feel free to substitute proteins or veggies as desired.
