  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • Salt and pepper to taste
  • Tortillas for serving
  • Lime wedges for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shrimp, red and green bell peppers, and onion in a large mixing bowl.
  3. Pour the olive oil over the mixture, followed by the fajita seasoning, salt, and pepper. Toss everything together until well coated.
  4. Spread the mixture on a sheet pan in a single layer.
  5. Bake in the oven for 10-12 minutes until the shrimp are opaque and cooked through.
  6. Serve the fajitas in warm tortillas and garnish with lime wedges.
