A vibrant and hearty dish featuring poached eggs in spiced tomato sauce, topped with creamy feta.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) diced tomatoes
  • 4 large eggs
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and red bell pepper; cook until softened, about 5 minutes.
  2. Stir in the garlic, cumin, and paprika; cook for another minute until fragrant.
  3. Pour in the diced tomatoes and season with salt and pepper. Simmer for about 10 minutes until the mixture thickens and flavors meld.
  4. Make little wells in the sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set but the yolks are still runny, about 5-6 minutes.
  5. Sprinkle the feta cheese and garnish with fresh parsley or cilantro before serving.
