  • 2 cups water or vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1 bell pepper, diced

  • 1 cup cherry tomatoes, halved

  • 1 teaspoon cumin

Instructions

  1. Rinse the quinoa under cold water to remove its natural coating, called saponin, which can taste bitter. In a medium saucepan, combine quinoa and water or broth.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  3. Combine black beans, corn, diced bell pepper, avocado slices, and halved cherry tomatoes in a large bowl, creating a colorful medley.
  4. Add the cooked quinoa to the bowl with the vegetables for a hearty mix.
  5. Drizzle olive oil, lime juice, cumin, salt, and pepper over the mixture, enhancing the flavors with vibrant zest.
  6. Toss gently to combine, ensuring each ingredient gets coated with the dressing, then garnish with fresh cilantro before serving.

Notes
