Ingredients

  • 1/2 cup protein powder
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup almond butter
  • 1/4 cup coconut oil, melted
  • 1/2 cup dark chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg or egg substitute

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine dry ingredients: oat flour, protein powder, brown sugar, baking soda, and salt.
  3. Mix wet ingredients: almond butter, melted coconut oil, vanilla extract, and egg until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in dark chocolate chips until evenly distributed.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are slightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Store cookies in an airtight container at room temperature for up to a week or freeze them for longer storage.
