- 2 cups Fresh broccoli florets
- 2 cups Chicken or vegetable broth
- 1 cup Sharp cheddar cheese
- 1/2 cup Heavy cream
- 2 tablespoons Butter
- 2 cloves Minced garlic
- 1 medium Chopped onion
- Salt to taste
- Black pepper to taste
Instructions
- Sauté the onion and garlic in melted butter until translucent.
- Toast the rice for 1-2 minutes in the buttery mixture.
- Add the chicken or vegetable broth and bring to a boil, then simmer covered for 15 minutes.
- Fold in the fresh broccoli and steam for an additional 5 minutes.
- Remove from heat and stir in heavy cream and cheddar cheese until melted.
