  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated carrot
  • 1 cup grated apple
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, and salt in a large bowl.
  3. Beat the eggs in another bowl and stir in the vegetable oil and vanilla extract.
  4. Add the wet ingredients to the dry mixture and mix until just combined.
  5. Fold in the grated carrot, grated apple, crushed pineapple, raisins, and walnuts gently.
  6. Fill the muffin liners about 2/3 full with the batter.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Store muffins in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. Best when warmed up.
