Caramelize the onions: In a skillet over medium-low heat, melt the butter. Add the sliced onions and allow them to cook gently for 20-25 minutes, stirring occasionally. As they soften, they will turn deep golden brown.
Prepare the sauce: While the onions are caramelizing, combine the blended cottage cheese, beef broth, and dried thyme in a blender. Blend until creamy.
Assemble the casserole: Preheat your oven to 375°F (190°C). In a large bowl, combine the shredded chicken and caramelized onions. Pour in the cottage cheese sauce and mix well.
