Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water to remove any bitterness. In a saucepan, combine the rinsed quinoa and water or broth, and bring it to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until all the liquid is absorbed. Fluff the quinoa with a fork and set it aside to cool.
  2. In a large bowl, mix the cooled quinoa with cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, Kalamata olives, and crumbled feta.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl, creating a zesty dressing.
  4. Pour the dressing over the quinoa and veggie mixture, tossing gently to ensure everything is evenly coated. Garnish with fresh parsley.

Notes

For optimal freshness, consume the salad within the first 24 hours of preparation. Store in an airtight container for up to 3 days.
