  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned, approximately 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  3. Add the minced garlic to the same skillet and sauté for 1 minute until fragrant.
  4. Add the sun-dried tomatoes, chicken broth, heavy cream, Italian seasoning, and red pepper flakes to the skillet. Stir to combine.
  5. Return the seared chicken breasts to the skillet and sprinkle with Parmesan cheese.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through.
  7. Garnish with fresh basil before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
