Deliciously crispy loaded potato skins filled with cheddar cheese and crumbled bacon, perfect for gatherings and movie nights.

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 1/4 cup sliced green onions

Instructions

  1. Preheat your oven to a toasty 400°F (200°C).
  2. Clean your russet potatoes and prick them several times with a fork.
  3. Bake the potatoes in the preheated oven for 45-60 minutes, or until tender.
  4. Cool the potatoes for a few minutes, then cut in half lengthwise and scoop out some flesh.
  5. Brush insides with olive oil and season with salt and pepper.
  6. Return the skins to the oven and bake for another 10 minutes until crispy.
  7. Fill each skin with cheddar cheese and crumbled bacon.
  8. Melt the cheese by baking for an additional 5-10 minutes.
  9. Garnish with sour cream and green onions, then serve warm.

Notes

For extra crispy skins, broil for the last minute or two, but watch carefully to avoid burning.
