  • 1/2 cup granulated sugar
  • 1 tablespoon poppy seeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, poppy seeds, baking powder, baking soda, and salt in a mixing bowl.
  3. Whisk together the melted butter, eggs, milk, vanilla extract, lemon juice, and lemon zest in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature butter and eggs. Feel free to substitute lemon with other citrus fruits.
