  • 1 whole chicken (about 45 lbs)
  • 2 lemons, halved
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C), filling the kitchen with anticipation for the delicious roast ahead.
  2. Mix the herb marinade by combining olive oil, minced garlic, rosemary, thyme, salt, and pepper in a bowl.
  3. Rub the herb mixture all over the chicken, making sure to get under the skin for maximum flavor infusion.
  4. Stuff the cavity of the chicken with halved lemons and quartered onion.
  5. Place the chicken in a roasting pan and pour the chicken broth around it.
  6. Roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 10-15 minutes before carving.
