  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla, lemon zest, and lemon juice.
  5. Combine the dry ingredients into the wet ingredients, mixing until just combined, then fold in the blueberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
