  • 8 ounces pasta (fusilli, rotini, or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, diced
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and cool.
  2. Prepare the vegetables and cheese by chopping the cherry tomatoes, dicing the cucumber, bell peppers, and red onion, and slicing the black olives. Cube the mozzarella cheese.
  3. Combine the cooled pasta with the prepared cherry tomatoes, cucumber, black olives, bell peppers, red onion, and mozzarella in a large bowl.
  4. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl, then taste and adjust seasonings.
  5. Dress the pasta salad with the dressing and toss gently to combine, ensuring all ingredients are evenly coated.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.
