Bring the vibrant flavors of Hawaii right to your backyard with this delicious Huli Huli Chicken, featuring a tantalizing marinade of sweet pineapple and rich soy sauce.

Ingredients

Scale
  • 4 pounds chicken (legs or thighs preferred)
  • 1 cup soy sauce
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup green onions (chopped, for garnish)

Instructions

  1. Create the Marinade: In a large bowl, mix together soy sauce, pineapple juice, brown sugar, ketchup, ginger, garlic, black pepper, and salt to create a delicious marinade.
  2. Marinate the Chicken: Add the chicken to the marinade and let it soak for at least 60 minutes, or overnight in the refrigerator for deeper flavor infusion.
  3. Preheat the Grill: Preheat your grill to medium-high heat to ensure perfect grill marks and excellent caramelization.
  4. Reserve the Marinade: Remove the chicken from the marinade and reserve the marinade for basting, ensuring additional layers of flavor while grilling.
  5. Grill the Chicken: Grill the chicken for approximately 25-30 minutes, turning occasionally and basting with the reserved marinade until fully cooked, with an internal temperature of 165°F (74°C).
  6. Garnish and Serve: Garnish the finished chicken with chopped green onions before serving to add a vibrant pop of color and flavor.

Notes

For even more flavor, let the chicken marinate overnight. You can enhance smokiness by adding a few wood chips to your grill.
