  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup whole wheat flour
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper. Dredge each piece in whole wheat flour, shaking off the excess.
  2. Heat olive oil in a skillet over medium heat. Add the floured chicken and cook until golden brown, about 5-7 minutes per side.
  3. Remove chicken and set aside to rest.
  4. Add minced garlic to the same skillet and sauté until fragrant, about 30 seconds.
  5. Pour in the chicken broth and lemon juice, scraping up any browned bits.
  6. Stir in the capers and return chicken to the skillet, cooking for another 2-3 minutes.
  7. Garnish with fresh parsley before serving.
