Delicious Ground Beef Quesadillas filled with seasoned beef, cheese, and fresh veggies, perfect for any meal.

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Cooking oil

Instructions

  1. Heat the skillet: In a skillet, heat a little cooking oil over medium heat, enough to coat the bottom.
  2. Sauté the vegetables: Add chopped onion and bell pepper, sauté until soft, about 3-4 minutes.
  3. Brown the beef: Add ground beef, garlic powder, chili powder, salt, and pepper. Cook until beef is browned, about 5-7 minutes.
  4. Remove and clean: Remove the beef mixture from the pan and wipe it clean to get ready for the tortillas.
  5. Build the quesadilla: Place a tortilla in the skillet, sprinkle half with cheese, add a portion of the beef mixture, then top with more cheese. Fold the tortilla over.
  6. Cook to perfection: Cook until golden and cheese is melted, about 3-4 minutes per side.
  7. Serve warm: Remove from skillet, slice and serve warm with sour cream or salsa.

Notes

These quesadillas are best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet on low heat.
