  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 bell pepper, cut into 1-inch pieces

  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper in a bowl.
  2. Marinate chicken cubes in the marinade for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread chicken, bell pepper, onion, and cherry tomatoes onto skewers, alternating as desired.
  5. Grill kabobs for about 10-15 minutes, turning occasionally, until chicken is cooked through.

Notes
