  • 1 bell pepper (any color), cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Mix together the olive oil, soy sauce, lemon juice, garlic powder, salt, and pepper in a bowl to create the marinade.
  3. Cut the chicken into bite-sized pieces and add it to the marinade. Allow to sit for at least 30 minutes.
  4. Thread the chicken, bell pepper, onion, and zucchini onto the skewers, alternating between ingredients.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through.
  6. Remove the kabobs from the grill and serve hot.
