  • 4 salmon fillets
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt, pepper, and lemon juice. Place them on a baking sheet and bake for about 12-15 minutes or until cooked through.
  2. Combine the cooked quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley in a large bowl.
  3. Drizzle with olive oil and season with salt and pepper. Toss gently to combine, allowing all the flavors to mingle beautifully.
