Ingredients

Scale
  • 1 lb chicken breast
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

  2. Combine the cooked rice or quinoa, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley in a large bowl, creating a delightful mixture.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl until well combined.
  4. Pour the dressing over the bowl of ingredients and toss everything gently to combine. Serve topped with the sliced chicken.
