  • 3 to 4 pounds beef roast (preferably ribeye or sirloin)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together minced garlic, rosemary, thyme, olive oil, salt, and pepper in a small bowl to create a herb paste.
  3. Rub the herb paste all over the beef roast, ensuring it’s evenly coated.
  4. Place the roast in a roasting pan and roast for approximately 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.
  5. Remove from the oven and let the roast rest for about 15 minutes before slicing.
