- 1 cup cottage cheese
- 1/2 cup unsweetened cocoa powder
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- Chocolate chips (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a blender, combine cottage cheese, cocoa powder, almond flour, honey (or maple syrup), melted coconut oil, eggs, vanilla extract, baking powder, and salt. Blend until smooth.
- Pour the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- If desired, sprinkle chocolate chips on top of the batter.
- Bake for 15-18 minutes, or until a toothpick comes out clean.
- Allow to cool in the tin for a few minutes before removing. Enjoy!
