2 cups cooked orzo pasta
1 lb boneless, skinless chicken breasts
2 large onions, thinly sliced
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 cup shredded cheese (Gruyere or Swiss)
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
Add minced garlic to the skillet with the caramelized onions and cook for another minute until fragrant.
In a large bowl, combine cooked orzo, chicken broth, heavy cream, caramelized onions, and diced cooked chicken. Season generously with salt and pepper, mixing well.
Transfer the mixture to a greased baking dish. Spread it out evenly for a beautiful bake.
Generously top the casserole with shredded cheese.
