  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 2 tablespoons green peppercorns, drained
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup red wine

Instructions

  1. Season the steaks by generously seasoning your filet mignon steaks with salt and black pepper on both sides.
  2. Heat up the skillet by heating 2 tablespoons of olive oil over medium-high heat.
  3. Sear the steaks in the hot skillet for about 4-5 minutes on each side for medium-rare.
  4. Let the steaks rest on a plate to allow the juices to redistribute.
  5. Simmer the red wine in the same skillet until reduced by half, scraping up browned bits.
  6. Combine cream, green peppercorns, Dijon mustard, and Worcestershire sauce into the pan.
  7. Create the final sauce by cooking until thickened, then taste and adjust seasoning.
  8. Serve the filet mignon topped with the creamy peppercorn sauce.
