Light and filling Egg White Muffins packed with protein and veggies, perfect for busy mornings.

Ingredients

  • 6 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 1/2 cup cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk the egg whites until frothy.
  3. Add the chopped spinach, diced bell peppers, diced onions, and cheese if using.
  4. Season with salt and pepper.
  5. Fill the greased muffin tins about 2/3 full.
  6. Bake for 20-25 minutes until set and lightly golden.
  7. Cool slightly before removing from the tin.

Notes

These muffins can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months.
