A healthy and delicious egg white frittata packed with fresh vegetables and feta cheese, perfect for brunch or any meal of the day.

  • 6 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, chopped
  • 1/4 cup feta cheese, crumbled
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a splash of olive oil in a skillet over medium heat.
  3. Add the chopped onion and diced bell peppers to the skillet and sauté until softened, about 3-4 minutes.
  4. Stir in the chopped spinach and cook until wilted.
  5. Whisk the egg whites, salt, and pepper together in a separate bowl.
  6. Pour the egg whites over the sautéed vegetables in the skillet.
  7. Sprinkle the crumbled feta cheese on top.
  8. Let the frittata cook on the stovetop for a few minutes until the edges begin to set.
  9. Transfer the skillet to the oven and bake for 10-15 minutes or until set and lightly golden.
  10. Once baked, let cool for a minute, then slice and serve warm.
