A quick and easy dish capturing the essence of egg rolls without the fuss of rolling and frying, made with seasoned meat and crisp veggies.

Ingredients

  • 1 pound ground pork or chicken
  • 1 tablespoon sesame oil
  • 2 cups coleslaw mix (shredded cabbage and carrots)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat the skillet: In a large skillet, heat sesame oil over medium heat until it shimmers.
  2. Add the meat: Add the ground pork or chicken to the skillet. Cook until browned, stirring occasionally, about 5-7 minutes.
  3. Stir in the garlic and ginger: Cook for an additional minute until aromatic.
  4. Add the coleslaw mix and green onions: Stir until the vegetables are tender, around 3-4 minutes.
  5. Pour in the soy sauce: Mix well and let cook for another 2 minutes.
  6. Season with salt and pepper: Adjust to taste.
  7. Serve hot: Garnish with sesame seeds if desired.

Notes

Great on its own, but can be served over rice or cauliflower rice for a low-carb option. It freezes well for up to a month.
