  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with the melted butter until they resemble wet sand.
  3. Press this mixture firmly into the bottom of a springform pan to create a sturdy base.
  4. Beat together the softened cream cheese and sugar until smooth.
  5. Stir in the vanilla extract.
  6. Add the eggs one at a time, mixing well after each.
  7. Pour in the heavy cream and mix until smooth.
  8. Carefully pour the cream cheese mixture over your crust.
  9. Bake in the preheated oven for about 60 minutes.
  10. Turn off the oven and let the cheesecake sit inside for another hour.
  11. Chill in the refrigerator for at least 4 hours or overnight.
  12. Sprinkle brown sugar over the top and caramelize with a kitchen torch.
