A lighter twist on classic lasagna, this Cottage Cheese Lasagna is packed with flavor and perfect for family gatherings.

  • 9 lasagna noodles
  • 2 cups cottage cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking.
  2. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente, then drain and set aside.
  3. In a mixing bowl, combine the cottage cheese, egg, dried basil, dried oregano, along with salt and pepper. Stir well until all ingredients are well blended.
  4. Spread a layer of marinara sauce at the bottom of your baking dish, creating a flavorful foundation for the lasagna.
  5. Place three lasagna noodles over the marinara sauce, ensuring an even distribution for maximum flavor in every bite.
  6. Spread half of the cottage cheese mixture over the noodles, then sprinkle a third of the mozzarella cheese on top for a cheesy delight.
  7. Continue the layering process with more marinara sauce, followed by noodles, the remaining cottage cheese mixture, and mozzarella. Finish up with the last three noodles, topping them off with the remaining marinara sauce, mozzarella, and finally, sprinkle on the grated Parmesan cheese.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden brown, creating an irresistible topping.
  9. Once baked, allow the lasagna to cool for a few minutes. Garnish with fresh parsley before serving, adding a pop of color and freshness.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, pop it back in the oven or microwave until warmed through. It also freezes well for up to 2 months.
