A nostalgic dessert featuring layers of fluffy biscuits, juicy strawberries, and whipped cream, perfect for summer gatherings.

Ingredients

Scale
  • 2 cups of fresh strawberries, hulled and sliced
  • 1/4 cup of sugar
  • 2 cups of all-purpose flour
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 cup of unsalted butter, cold and cubed
  • 1 cup of heavy cream
  • 1 teaspoon of vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the strawberries: In a bowl, combine the sliced strawberries with sugar and let sit for about 30 minutes to release juices.
  2. Preheat your oven to 450°F (230°C).
  3. Combine dry ingredients: In another bowl, mix flour, baking powder, and salt.
  4. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  5. Mix wet ingredients: Stir in the heavy cream and vanilla extract until just combined.
  6. Knead and shape the dough: Turn the dough out onto a floured surface. Knead gently and pat into a 1-inch thickness.
  7. Cut into rounds and place on a baking sheet. Bake for 12-15 minutes until golden and puffed up.
  8. Assemble the shortcakes: Slice in half, spoon strawberries over the bottom half, add whipped cream, and top with the other half.

Notes

Ensure butter is cold; assemble shortcakes just before serving for best texture.
