A vibrant and flavorful dish where bright lime meets fresh cilantro, perfect for dinner gatherings.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Marinade: In a bowl, combine the fresh lime juice, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper.
  2. Marinate the Chicken: Place the chicken breasts into the marinade, ensuring they are well-coated. Allow them to marinate for at least 30 minutes.
  3. Heat the Oil: In a large skillet, heat the olive oil over medium heat.
  4. Cook the Chicken: Carefully add the marinated chicken breasts to the hot skillet. Cook for about 6-7 minutes on each side.
  5. Garnish and Serve: Once cooked, remove the chicken and let it rest for a couple of minutes. Serve with extra cilantro and lime wedges on the side.

Notes

For deeper flavor, marinate the chicken overnight. You can also grill for a smoky flavor. Don’t skip the resting step after cooking.
