  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • Flour, for dredging
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat.
  3. Add the chicken to the skillet, cooking until golden brown, about 3-4 minutes per side.
  4. Remove the chicken and set aside to keep warm.
  5. Deglaze the skillet with lemon juice, chicken broth, and capers, bringing to a boil.
  6. Return the chicken to the skillet and simmer for 5-7 minutes until fully cooked.
  7. Whisk in remaining butter until melted, then pour the sauce over the chicken and garnish with parsley before serving.
