A comforting dish featuring tender chicken and earthy mushrooms in a rich Marsala wine sauce.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini or button mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts generously with salt and pepper, then dredge them in flour, shaking off the excess.
  2. Heat the olive oil and unsalted butter in a large skillet over medium-high heat until the butter melts.
  3. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 5 to 7 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. Toss in the sliced mushrooms and sauté until they release moisture and start to brown.
  6. Pour in the Marsala wine and use a wooden spoon to scrape the bottom of the pan.
  7. Add the chicken broth and bring to a gentle simmer.
  8. Return the chicken to the skillet, allowing it to simmer until the sauce thickens and the chicken is cooked through, about 10-15 minutes.
  9. Plate the chicken, spoon the mushroom sauce over it, and garnish with fresh parsley.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. Pair with creamy mashed potatoes or steamed vegetables.
