A comforting dish featuring perfectly browned chicken breasts nestled in a savory mushroom, garlic, and Madeira wine sauce, topped with gooey mozzarella cheese.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off the excess.
  3. Sear the chicken in a large skillet with olive oil and butter for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. Sauté the sliced mushrooms and garlic in the same skillet for about 3-4 minutes until softened.
  5. Create the sauce by pouring in the Madeira wine and chicken broth, bringing it to a simmer, and cooking for about 5 minutes.
  6. Combine the chicken back into the skillet, spooning sauce over it, and sprinkle with mozzarella cheese.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh parsley before serving.

Notes

Chicken Madeira pairs wonderfully with buttery mashed potatoes, a crisp salad, or garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
