A comforting Chicken Cordon Bleu recipe with tender chicken, savory ham, and melted Swiss cheese encased in a crispy coating.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 cup of breadcrumbs
  • 1/2 cup of all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • 2 tablespoons of butter
  • 1 tablespoon of olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap, and pound them down to about 1/4 inch thick.
  3. Generously season each piece of chicken with salt and pepper.
  4. On each chicken breast, place a slice of ham and a slice of Swiss cheese. Roll them up tightly and secure with toothpicks.
  5. Start by dredging each chicken roll in flour, then dip in beaten eggs before coating with breadcrumbs.
  6. In a skillet, heat the butter and olive oil over medium heat. Add the chicken rolls and brown them on all sides.
  7. Transfer the browned chicken rolls to a baking dish and bake for 25-30 minutes, or until cooked through.
  8. Once baked, remove the toothpicks while they rest for a few minutes. Slice and serve!

Notes

Pairs well with a green salad, roasted vegetables, or buttery mashed potatoes. Store leftovers in the fridge for up to 3 days.
