Ingredients

  • 1 medium head of cauliflower, riced
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1 egg, beaten
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Pizza toppings of choice (e.g., tomato sauce, more cheese, vegetables, pepperoni)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rice the cauliflower using a food processor or grater.
  3. Microwave the riced cauliflower for about 5 minutes in a microwave-safe bowl.
  4. Cool the cauliflower and squeeze it in a kitchen towel to remove moisture.
  5. Combine the riced cauliflower, mozzarella, parmesan, beaten egg, Italian seasoning, salt, and pepper in a mixing bowl.
  6. Form the mixture into a circle about 1/4-inch thick on a lined baking sheet.
  7. Bake the crust for 12-15 minutes until golden brown.
  8. Add your desired toppings onto the baked crust.
  9. Return the topped pizza to the oven and bake for an additional 10 minutes.

Notes

Make sure to squeeze out as much moisture from the cauliflower as possible for a crispy crust. Experiment with different cheeses and toppings!
